Cranberry Nut Bread Recipe

A slightly cinnamony cranberry bread made even more special by a tart and creamy topping. --The Four Chimneys Inn, Nantucket, Massachusetts

Yield: Makes 1 loaf

  • 2 cups sifted flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts
  • 1 egg
  • 1 cup whole cranberry sauce
  • 2 tablespoons vegetable oil
  • 1/2 cup cranberry sauce
  • 3 ounces cream cheese
  • 1 teaspoon grated lemon rind

Sift onto waxed paper all the dry ingredients. Add the walnuts. In mixing bowl beat egg and add 1 cup cranberry sauce and oil. Add the dry ingredients. Stir till blended. Pour into greased loaf pan and bake at 350 degrees F for 55 minutes. Cool. Blend 1/2 cup cranberry sauce with cream cheese; mix in grated lemon rind. Spoon over each slice when ready to serve.
