Nice cranberry sauce made with orange juice instead of water.
Yield: Approximately 1 quart
Preparation Time: 20 minutes
Start to Finish Time: 35 minutes
- 4 cups cranberries
- 1 cup orange juice
- 1 cup sugar
- 1/4 cup brown sugar
- 1/4 cup raisins (optional)
- 1/4 teaspoon cinnamon (or to taste)
- Ginger to taste (optional)
In a large saucepan over medium heat, combine the orange juice, sugar and brown sugar. Stir until the sugars dissolve. Add the cinnamon and optional ginger and stir well. Add 4 cups of cranberries and stir occasionally for 10-15 minutes until the cranberries start popping. Stir in the raisins then remove the saucepan from heat (I like to keep it on the heat for another minute so more berries pop). Allow the sauce to cool and thicken a bit before you put it into a food storage container and refrigerate. Also makes a tasty topping for apple pie!
