A showy dessert requiring little work. Great fun for a birthday party or a festive dinner Top with chocolate sauce, if desired.
Yield: Makes 12 puffs.
- 1 stick butter
- 1 cup water
- 1 cup flour
- Dash of salt
- 4 eggs
- Cream Puff Filling (recipe follows)
Put butter and water in a saucepan. Place over low heat until mixture boils. Add flour and salt all at once and cook until thick and smooth, stirring constantly. Remove from heat and add unbeaten eggs, one at a time, mixing thoroughly after each addition. Place dough in mounds about 1-1/2 inches apart on a greased baking sheet and bake at 400 degrees F about 35 minutes, until puffed and golden. To fill, cut horizontally with a sharp knife. Fill with Cream Puff Filling or with whipped cream.
Cream Puff Filling
- 1/2 cup sugar
- 5 tablespoons flour
- 1/8 teaspoon salt
- 1/4 cup cold milk
- 1-1/2 cups milk, scalded
- 3 egg yolks
- 3 egg whites, stiffly beaten
- 1 teaspoon vanilla
Mix sugar, flour, and salt together with cold milk and pour slowly into scalded milk. Add egg yolks and cook in a double boiler until thickened. Fold in stiffly beaten egg whites. Cool and add vanilla.
