Crispy Crunchy Peanut Brittle Recipe

The addition of baking soda and rice cereal adds a pleasing lightness to this traditional peanut candy.

Yield: 1-1/2 pounds

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 cups crispy brown rice cereal
  • 1-1/2 cups skinned unsalted peanuts
  • 1-1/2 teaspoons baking soda

Coat a jelly-roll pan with nonstick cooking spray. In a large saucepan over high heat, combine sugar, corn syrup, and water and bring to a boil. Add peanuts. Reduce heat to medium and, stirring often, cook to hard crack stage (295 degrees to 300 degrees F.). Stir in baking soda (mixture will foam), followed by crispy rice cereal. Pour brittle onto prepared pan and spread to 1/4-inch thickness. When cool break into pieces. Store in an airtight container.
