Date Bran Muffins Recipe

Yield: 1 dozen muffins

  • 1-1/4 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 3 cups 100% bran cereal (not flakes)
  • 1-1/4 cups milk
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 cup dates, chopped

Preheat the oven to 400°F. Grease 12 muffin cups. Stir together the flour, baking powder, salt, and sugar; set aside. Combine the cereal and milk and let stand for 1 to 2 minutes. Add the egg and oil; beat well. Stir in the dates. Add the dry ingredients and stir to combine. Pour into the muffin cups and bake for 20 to 25 minutes, or until golden brown. Remove from the pan immediately. Serve warm or at room temperature.
