Yield: Makes 4 dozen.
- 1 cup soft butter
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- 2 cups sifted flour
- 1/8 teaspoon salt
- 1-1/3 cups coarsely ground blanched almonds
- 1/2 cup confectioners sugar
- 2 teaspoon nutmeg
Cream butter and sugar. Blend in vanilla. Add flour, salt and almonds; mix well. Shape into 1-inch balls and chill for approximately 1 hour. Bake in 300-degree oven for 13-20 minutes. Mix confectioners sugar and nutmeg together and sprinkle over butterballs. Store in an airtight container. Will ship well.
