egg and potatoe fritters moroccan stlye Recipe

I recently went on a trip to my husbands family in Morocco, and I had this at his mother's house it was great. This is something great to serve as an appitizer or just a snack like we did.

  • 4 diced potatoe
  • 2 eggs
  • 3 tablespoon of chopped parsley and cilantro
  • 4 cloves crushed garlic
  • 1 tablespoon cumin
  • 1/4 teaspoon pepper, salt
  • flour

wash potatoes in salted water then mash with for or a masher. Place potato puree in bowl, add 1 egg, parsley, cilantro, garlic, cumin, salt, pepper. mix well. make balls out of the mixture, and flatten lightly with fingers. Dip one at a time in 1 beaten egg then dip into flour. shake off excess flour if needed. fry in hot oil brown on both sides.
