Egg in the Hole Recipe

Also known as "egg in a nest," "eye of Egypt," and "one-eyed pirate," this is easy to make, fun to serve, and good to eat. -Birch Hill Inn, Manchester, Vermont

  • 2 tablespoons margarine
  • 1 slice firm wheat bread
  • 1 egg
  • Salt and pepper

On griddle, melt margarine. Cut a circle in the center of the bread with a 3-inch-round cookie cutter (leave center piece in bread slice at this time). Brown bread, turn, and brown second side. Remove center of bread and keep warm on side of griddle. Drop egg into hole, add salt and pepper to taste, and cook until set. Turn and cook briefly on second side. Serve with toast round atop.
