Finnish Pancakes Recipe

Yield: 4 servings

  • 3 Tbsp butter, melted
  • 4 eggs
  • 2 cup milk
  • 1 cup all purpose flour
  • 1/8 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract

Melt butter in a 13x9 baking pan in the oven at 400°F; set aside. Place eggs in a blender; blend well. Add milk, flour, salt, sugar and vanilla; blend thoroughly. Pour into a pan; bake at 400°F for 35 minutes.
