2 pounds fish frames, including 1 fish head
2 stalks celery, chopped
2 carrots, peeled and chopped
2 to 3 onions, chopped
1 clove garlic, coarsely chopped
1 cup chopped leek greens, or tops of 3 leeks
2 sprigs thyme
2 sprigs parsley
1 bay leaf
2-1/2 quarts cold water


Combine all ingredients in soup kettle. Bring to a boil, skim, and simmer 30 minutes, uncovered. Strain.
