An outstanding way to prepare fish filets--coated with buttermilk batter and bread crumbs, then baked until golden and slightly crisp. --The Vermont Inn, Killington, Vermont

Yield: Serves 8.

  • 1 cup heavy mayonnaise
  • 1 cup buttermilk
  • 1 cup lemon juice
  • 1 teaspoon granulated garlic
  • Salt and pepper to taste
  • 8 filets of fresh Boston scrod (6 ounces each)
  • 2 cups bread crumbs
  • Lemon garnish

Mix first 5 ingredients to form a batter; coat fish filets with batter and then with bread crumbs; bake at 450 degrees F for 12-15 minutes on greased baking sheet. Serve with lemon garnish.
