During Lent, my family eats more fish than usual. Some recipes are a little tricky. Some recipes are easy. I love this one because it's easy and the outcome is delicious.
Yield: 4 servings
- 4 4-ounce salmon fillets
- 1 can chopped spinach, drained
- 2 tablespoon white wine
- 1/2 can canneloni beans, rinsed
- 1/2 teaspoon minced garlic
- salt and pepper to taste
Preheat oven to 325 degrees Line a baking pan with aluminum foil and arrange the four salmon fillets in it.
Mix spinach, beans, white wine, and garlic in a bowl; mound a heaping helping over each fillet, and cover the pan with a sheet of aluminum foil.
Bake for 20 to 25 minutes, or until done. Season with salt and pepper to taste.
