Fruit Salsa Recipe

  • 2 cups cherry or berry preserves
  • 2 tablespoons lemon juice
  • 1 red serrano or jalapeno chili pepper, seeded and minced (wear rubber gloves)
  • 3 scallions, root ends trimmed, finely chopped
  • 2 tablespoons minced fresh mint leaves

In a small bowl, combine all ingredients and let sit about 5 minutes. Serve with tortilla chips or on top of roasted or grilled fish or chicken.
