10 eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1-1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4 cup butter, melted
3 cups cottage cheese
10 ounces frozen chopped spinach, thawed and squeezed dry
1/2 yellow or green pepper, chopped
1/2 red pepper, chopped
1 bunch scallions, chopped
12 ounces Swiss cheese, grated


Preheat oven to 350 degrees. In a blender or food processor, combine eggs, flour, baking powder, onion powder, garlic powder, butter, and 1 cup cottage cheese; blend well. Pour mixture into a large bowl; add remaining cottage cheese, spinach, peppers, scallions, and Swiss cheese. Mix thoroughly. Divide mixture between two greased 10-inch pie pans. Bake 40 to 45 minutes, or until set.

This is the best quiche I've ever made! You can modify to make it even healthier by reducing the number of egg yolks, using fat free/low fat cottage cheese, low fat cheeses, etc. I love that there is no crust to get soggy and it's great with a little turkey bacon or canadian bacon added for the meat lovers in the crowd:-)
