Yield: 6 servings
- 2-1/2 pounds beef tenderloin, trimmed
- 1 tablespoon spicy Dijon mustard
- 2 tablespoons mayonnaise
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried ground thyme
- 1/2 teaspoon freshly ground black pepper
Place the tenderloin in a baking dish. In a small bowl combine the remaining ingredients. Rub all over the tenderloin. Bake for 45 minutes for medium-rare or for desired doneness. Slice the tenderloin and serve.
