Great-Grandmother's Sponge Cake Recipe

Yield: Makes 12 servings.

  • 4 eggs
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 cup hot milk
  • 1/4 cup (1/2 stick) butter, melted
  • 2 cups whipping cream
  • 1/2 cup sugar
  • 2 cups fresh berries (any variety)

Beat eggs and the 2 cups sugar until fluffy. Sift flour with baking powder. Add to egg mixture. Add vanilla, salt, milk, and butter. Pour into greased and floured 10-inch tube pan. Bake at 350 degrees F for 45 minutes. Cool and cut across middle. Whip cream with the 1/2 cup sugar. Frost the center and the top each with half the cream and 1 cup berries.
