Yield: 8 servings
- 6 green tomatoes, sliced in rings
- 1 cup Ritz crackers, crumbled (about 24)
- 1 cup sharp cheddar cheese, grated
- 4 tablespoons butter
- salt and pepper
In a buttered shallow baking dish layer half of the tomatoes, sprinkle with salt and pepper. Add half the crumbs and half the cheese; then top with half the butter in small pieces. Layer the other half of tomatoes, seasoning and cheese. Add remaining crumbs and butter last. Bake at 350 degrees for 30 minutes, covered, 10 minutes uncovered.
