Perfect for brunch, Sunday supper, or unexpected company -- so simple, they can be prepared in a matter of minutes.
Yield: Serves 6-8.
- 3/4 pound cheddar cheese, grated
- 1/2 pound bacon, cooked and cut into bits
- 1 green pepper; chopped
- Mayonnaise to moisten
- 6 to 8 English muffins, toasted
Mix all but last ingredient together and place a heaping tablespoonful on each toasted English muffin half. Heat under a broiler until cheese melts and browns lightly.
