Ham Loaf Recipe

A good way to make use of leftover ham.

Yield: Serves 6-8.

  • 4 cups cooked ham, finely ground
  • 2 cups cooked rice
  • 8 slices fresh bread, torn into small pieces
  • 1 green or sweet red pepper, chopped
  • 1 medium onion, chopped
  • 2 teaspoons dry mustard
  • 1 cup milk
  • 3 eggs, lightly beaten

Preheat oven to 350°. Combine all ingredients as you would to make meat loaf, mixing well with your hands. Add more milk if mixture seems dry. Pat into 9x5-inch loaf pan and bake 1 hour. Serve with Spiced Fruit Sauce for Ham.
