This is a favorite Baird family supper dish and, happily, an undemanding one.
Yield: Serves 6 to 8.
- 1 pound ground pork sausage
- 2 pounds lean ground beef
- 2 cups mashed potatoes
- 1 medium onion, chopped
- 2 slices stale bread, crumbled
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1/2 teaspoon salt
- 1/2 teaspoon coarsely ground pepper
- 1 teaspoon sage
Brown pork sausage and beef; drain excess fat. Add mashed potatoes, onion, bread, and seasonings. Cook over low heat, stirring occasionally to keep from burning; taste and adjust seasoning if desired. Bake, covered, for about 25 minutes at 350 degrees F. This can also be used as a turkey stuffing.
