Crisp, and good as they are healthy.
- 1 cup brown sugar
- 1/4 cup white sugar
- 1/4 cup honey
- 1 cup shortening
- 2 eggs, unbeaten
- 1 teaspoon vanilla
- 1/2 cup white flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup wheat germ
- 1-1/4 cups whole-wheat flour
- 2 cups oatmeal
Cream the sugars, honey, and shortening together thoroughly, then add the eggs and vanilla and mix together until fluffy. Sift the flour, baking soda and salt together. Mix the wheat germ and the whole-wheat flour into the dry mixture. Add to the creamed mixture, blending all ingredients. Then stir the oatmeal into the dough with a table knife. Drop by teaspoons onto an ungreased cookie sheet and bake at 350 degrees F for 8-10 minutes.
