- 4 cups dry white breadcrumbs
- 1/2 cup melted butter
- 1/2 onion, minced
- 1 stalk celery, minced
- 1/4 cup parsley, minced
- 1/4 cup watercress, minced
- 1/2 teaspoon dried tarragon
- a pinch of dried thyme or marjoram
- 1/2 teaspoon salt
- white pepper
Mix together lightly with a fork and stuff the bird.
