Herb Stuffing

  • 4 cups dry white breadcrumbs
  • 1/2 cup melted butter
  • 1/2 onion, minced
  • 1 stalk celery, minced
  • 1/4 cup parsley, minced
  • 1/4 cup watercress, minced
  • 1/2 teaspoon dried tarragon
  • a pinch of dried thyme or marjoram
  • 1/2 teaspoon salt
  • white pepper

Mix together lightly with a fork and stuff the bird.
