This has been modified from several recipies until the perfect combination has been found. It is almost impossible to eat just one! They store well to take camping etc. but don't expect them to last long!
Yield: about 24 cookies
- Cookies
- 2 Packets of Duncan Hines Devil
- 4 Eggs
- 2/3 Cup Oil
- Frosting
- 1/4 Cup Butter
- 2 Cups Icing Sugar
- 1/2 Package of Cream Cheese
Method
Combine all the cookie ingredients in a super-large bowl and mix by hand until it forms a dough ball.
Roll into 1" balls, and bake on ungreased sheets at 375 degrees for 8 minutes on a rack in the middle of the oven.
Remove the cookies from the oven, and drop the cookies about 12" onto the counter (this flattens them)
Allow the flattened cookies to cool on the tray. When the cookies are cool, frost with the cream cheese icing.
Icing
Blend the butter, sugar and cream cheese well. If the mixture is thin, chill for a bit.
Sandwich the cookies together with this icing mixture.
