This is an old family recipe. Very good.

Yield: 8 to 10 patties

  • 1 pound lean ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red pepper
  • 1/2 teaspoon sage
  • 1/4 teaspoon sugar

Mix all ingredients together well. Shape into patties and fry; drain well.

The sausage may be batched and frozen.
