Italian Pork Chops

This is a recipe I developed myself. It uses some of the fresh tomatoes, parsley, I have grown in my garden. It is greatly enjoyed.


3-4 pork chops
2 cups diced fresh tomatoes
Parsley leaves, fresh or dried
Oregano leaves, dried
1/2 teaspoon each of pepper, garlic and onion powder
1 can Swanson chicken broth
3/4 cup Fry Magic
1 teaspoon Seasonal
Pinch of basil
3/4 cup oil


Mix seasonings with the Fry Magic, coat the chops well on both sides, place into pan with hot oil, brown. Remove the chops and drain excess oil from pan. Pour in the chicken broth and add the chops, pour the diced tomatoes over this, sprinkle the parsley and oregano with just a pinch of basil over this, cover and simmer for 30-40 minutes, until chops are tender. Remove meat from pan, thicken the juice with cornstarch mixed with cold water, this makes a nice gravy to serve over noodles, mashed potatoes or rice.
