Jared's Cranberry Salad

Sweet, crunchy, and refreshing. Prepare in advance and refrigerate to give it plenty of time to set up. –Jared Coffin House, Nantucket, Massachusetts


1 cup cranberries
2 ounces sugar
1 cup mandarin orange segments
2 ounces chopped celery
2 ounces chopped walnuts
Pinch of salt
3 ounces mayonnaise
3 ounces heavy cream, whipped


Marinate cranberries in sugar for 1 hour in a stainless steel bowl. Add mandarin orange segments, celery, nuts, and salt. Fold in mayonnaise and whipped cream. Refrigerate until set. Serve on a bed of lettuce garnished with orange segments and chopped nuts.
