Kale Soup

Kale is a popular soup ingredient with Portuguese cooks from Gloucester to New Bedford and Provincetown. If unavailable, substitute spinach.


2 potatoes, peeled and cubed
1-1/2 quarts cold water
1/2 pound chorizo or linguica sausage, sliced
4 cups finely shredded kale (as thin as you can cut it)
Salt and pepper to taste


Combine potatoes and water in soup kettle and simmer, partially covered, 15 minutes or until tender. Meanwhile, saute sausage in heavy skillet over low heat until brown. When potatoes are tender, mash in kettle with remaining water. Drain sausage and add to kettle with kale. Cover and simmer 10 minutes. Season with salt and pepper.
