Lake View Cottage's Oatmeal Apple Butter Bars

1-1/4 cups flour
1 cup brown sugar
1/2 teaspoon cinnamon, Vietnamese is the best
3/4 cup butter, cut in pieces
1-1/4 cup rolled oats
3/4 cup apple butter


Heat the oven to 350 degrees F. Mix flour and sugar in a food processor. Add butter and pulse until butter is in pieces a little smaller than peas. Add the rolled oats and pulse 4 or 5 times. Press half of the mixture into an ungreased 8x8 inch pan. Spread the apple butter over this layer to within ½ inch of the sides. Sprinkle the rest of the mixture over the apple butter and carefully press out to the sides. Bake 35 to 40 minutes until lightly browned. Cool in the pan. Cut into 2-inch squares.
