Leek Pie

I learned to make this from my grandmother who came from a small village in Albania.. it is very good


4 cups flour
one envelope dry yeast
1 3/4 cups warm water
2or 3 medium leek
32 oz cottage cheese
6 eggs
1/2 cup crumbled feta chees
butter (for saute leek and brush on crust)
dash of salt for leeks, and some for crust


in a glass dish mix yeast and 1 ¾ cups warm water , set aside to proof.. in food processer put four in bowl with about 1tsp salt then add yeast mixture through tube until mixed and kneeded.. take dough out put in bowl and cover to rise for 1 hour…meanwhile cut and wash leek only white part like thin slices of celery… saute on med to low heat with small amt. of butter till soft (do not brown).. when dough is done cut in half.. roll out to fit a 9x13 pan inside and up over the edges.. fairly thin.. when this is in the pan. you add filling which is the eggs beaten mixed with the cottage cheese, leeks, feta …pour into pan then roll out second piece of dough and cover top and roll the edges to close the pie.. bake at 350 for 50-60 minutes.. as soon as it is out of oven brush top with real butter.. let sit for about 15 minutes before cutting to serve.. good reheated later.. hope you love it like we do, it is worth the effort..
