Lemon Walnut Bread

Yield: Makes 1 loaf.

  • 1/2 cup (1 stick) butter
  • 1 cup sugar
  • 2 eggs
  • 2 scant cups flour, sifted
  • 1 scant tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup fresh lemon juice
  • 1/2 cup buttermilk
  • 1 cup chopped walnuts

Preheat oven to 350 degrees F. Cream the butter and sugar, add the eggs, and beat. Sift dry ingredients into this and add lemon juice and buttermilk. Beat just enough to mix, then add nuts. Pour into a greased loaf pan and bake 50 to 60 minutes. Cool on a rack.
