As many New Englanders will tell you, the simpler a lobster stew is, the better it tastes.
Yield: Serves 4
- 3 tablespoons butter
- 1 onion, peeled and chopped
- 2 cups milk
- 2 cups cream
- 1 cup cooked lobster meat chunks
- 2 tablespoons sherry, or more to taste
- Salt and pepper to taste
- Paprika
Melt butter in saucepan. Saute onion until tender. Slowly add milk, cream, and lobster meat. Heat but do not boil. Add sherry, season with salt and pepper, and garnish with paprika.
