A classic biscuit laced with maple sugar. A welcome bit of New England for this dinner menu and also for breakfast.

Yield: Makes 12 biscuits.

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup shortening
  • 3/4 cup milk
  • 2 to 3 tablespoons butter, melted
  • 1/2 cup crushed maple sugar

Sift dry ingredients into a bowl. Cut in shortening. Add milk to make a soft dough. Place on a floured board and toss lightly. Roll out to 1/2-inch thick and cut with floured biscuit cutter. Place on a greased cookie sheet. Brush tops of biscuits with melted butter and sprinkle with maple sugar. Bake in a 450 degrees F oven for 10 to 12 minutes.
