Maple Syrup Cake Recipe

Yield: Makes 12 servings.

  • 1/2 cup (1 stick) butter
  • 1 cup sugar
  • 2 eggs, beaten
  • 1 cup maple syrup
  • 1/2 cup hot water
  • 2-1/2 cups flour
  • 2 teaspoons baking powder
  • 2/3 teaspoon baking soda
  • 1/2 teaspoon ginger

Cream butter with sugar. Add beaten eggs and maple syrup. Sift together dry ingredients and add, alternating with hot water. Bake in greased angel food cake pan for about 50 minutes at 350 degrees F. Cover with vanilla or maple icing and garnish with pecan or walnut halves.
