Mexicali Eggs Recipe

Yield: Serves 8

  • 8 eggs
  • 1 cup reduced-fat Bisquick
  • 1 stick butter or margarine, melted
  • 16-ounce container low-fat cottage cheese
  • 8 ounces shredded cheddar cheese
  • 1 cup low-fat milk
  • 11-ounce can corn niblets, drained
  • salsa and sour cream
  • salt, pepper, and Tabasco to taste

Preheat oven to 350 degrees F. Mix all ingredients together and pour into greased 9x13-inch baking pan. Bake for 40 to 50 minutes. Cut into squares and top each square with salsa and a dollop of sour cream. This can also be baked in two round 9-inch cake pans; bake for 30 to 40 minutes and cut into slices.
