Mint Jelly with Vinegar

The traditional accompaniment to lamb.


1 packed cup mint stems and leaves
1 cup water
3-1/2 cups sugar
1/2 cup cider vinegar
1/2 bottle liquid pectin
green food coloring


Wash the mint, put into a pan, and pound with the bottom of a cup or glass. Add the water, sugar, and vinegar and bring to full rolling boil, stirring. Add the pectin and coloring. Continue to stir until a full rolling boil is again attained. Boil quickly for 30 seconds, then skim, remove from heat and strain. Pour into glasses and seal.
