This treat is especially tasty served the way the inn recommends–garnished with fresh apple slices and a sprig of parsley, plus hot maple syrup. —The William Seward Inn, Westfield, New York


Serves 4.


12 slices bread
12 slices ham, about 1/4 inch thick, cut to the size of the
12 slices smoked Swiss cheese, cut to the size of the bread
4 to 5 eggs, beaten


Remove the crusts from the bread. Butter 1 side of 4 slices of bread and place 3 ham slices on top of each. Butter the top and bottom of 4 more slices and place 1 slice on top of each ham stack. Place 3 slices of cheese on top of each slice of bread. Then butter 1 side of the remaining 4 slices of bread and place 1 slice, buttered side down, on top of each cheese stack. Secure each sandwich with 4 toothpicks, 1 near each corner. Cut the sandwiches in half.
Melt 2 tablespoons of butter in a frying pan. Dip the sandwiches in the beaten egg, turning to make sure all the sides are well covered. Place the sandwiches in the frying pan, toothpick side up. Brown on all sides. (Push the toothpicks partway through to brown the top.)
