Mrs. George Washington's Crab Soup

Served in the White House by Mrs. Franklin Delano Roosevelt.

  • 1-1/2 cups crabmeat
  • 1 quart milk
  • 2 hardboiled eggs
  • suggestion of nutmeg
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 teaspoon mushroom sauce (mushroom catsup)
  • 1/2 teaspoon A-1 sauce
  • 1/3 cup sherry
  • 1/2 cup cream
  • salt and pepper

Pick crabmeat over for shells and set aside until needed. Mash the hardboiled eggs to a paste with a fork and add to them the butter, flour, and a little pepper. Bring the milk to a boil and pour it gradually onto the well mixed paste of eggs, etc. Put over a low fire, add the crabmeat, and allow to simmer for 5 minutes. Add the cream, and bring to the boiling point again, then add sherry, salt and sauce. Heat sufficiently to serve, but do not boil after the sherry has been added.
