So called because nobody can ever guess what's in it. Could your

  • 1 cup salad oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons soda
  • 2 teaspoons cinnamon
  • 3 cups grated carrots
  • 1 cup chopped nuts

Cream together the oil and sugar. Beat in the eggs. Sift together the flour, soda, and cinnamon and add. Beat 1-1/2 minutes. Fold in the carrots and nuts. Bake in a greased loaf pan (9x5x2-3/4 inches) at 350degrees F for 1 hour. Frost when cool with White Gold Icing.

White Gold Icing

  • 1 8-ounce package cream cheese
  • 4 tablespoons butter or margarine
  • 1 pound confectioners' sugar
  • 2 teaspoons vanilla

Soften the cream cheese and blend with the butter or margarine. Add the confectioners' sugar gradually. Add the vanilla. Frost the top and sides of the cake.
