Cream together the oil and sugar. Beat in the eggs. Sift together the flour, soda, and cinnamon and add. Beat 1-½ minutes. Fold in the carrots and nuts. Bake in a greased loaf pan (9x5x2-¾ inches) at 350degrees F for 1 hour. Frost when cool with White Gold Icing.
White Gold Icing
Soften the cream cheese and blend with the butter or margarine. Add the confectioners’ sugar gradually. Add the vanilla. Frost the top and sides of the cake.
