New Orleans Roast Beef Recipe

  • 1 3 1/2lb beef eye of round roast
  • 1 tbsp plus 3 tsp oil divided
  • 10 whole garlic cloves, peeled
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 2 tbsp worcestershire sauce
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Preheat oven to 350

Using a long, thin knife, carefully make a horizontal slit through the roast. Twist the knife gently to make a 1/2 in hole. In a small sauce pan, heat 2 tsp of oil on medium high heat. Saute the garlic cloves for 4 minutes, stirring often. Allow the garlic cloves to cool. In a small bowl, combine the remaining ingredients, except the roast; mix well and set aside. When the garlic is room temperature, push the cloves into the hole in the center of the roast until they fill the hole. Rub the oil mixture over the entire roast. Place the roast in a baking dish. Roast for 75 minutes or until desired doneness. Serve immediately.
