Old-Fashioned Potato Soup

Ingredients

4 potatoes
3 cups milk
1 tablespoon chopped onion
2 tablespoons butter
1 tablespoon flour
celery salt
salt
cayenne pepper

Instructions

Boil the potatoes and mash them. Brown the onion in butter, add the flour, then the potatoes, milk and seasonings. Stir and heat until smooth. Serve sprinkled with grated cheese and chopped parsley.

I live in New Mexico. The land of the Hatch Green Chili. And, I love potato soup. In trying to use up the abundance of green chilis I always seem to end up with I decided to try them with potato soup.
Roast the chilis either stuck onto the end of a cooking fork over your stoves fire or on a bbq. Either works and the flavor is so much better than just blanching or roasting in the oven. Place the chilis in a covered bowl to sweat. The skin comes of easy as can be. I like mine mild so I de-seed them completely and remove any veins from the inside. For those who like an even milder but rich flavor, try Anaheim Chilis.
In mine I also saute some chopped celery along with the onion. The last batch I made I had leftover corn on the cob I cut the corn from. Toss in the cob (the cob without corn is a wonderful flavoring to add to nearly any soup), replace 1/2 C of milk with 1/2 C vegetable stock, toss in your chopped chilis, add a little ground pepper but keep it on the light side. You don't want to compete with the flavor of the chili. Near the end of the cooking time toss in that leftover corn. Because I'm using the chilis I eliminate using the cayenne pepper. Sprinkle the soup in the bowl with a nice strong grated cheddar cheese and a little paprika before serving and watch the smiles.

IF YOUR SOUP GETS TOO WATERY JUST ADD ABOUT 2 TBSPS OF INSTANT POTATOES TO IT AND STIR UNTIL SMOOTH (OR USE HAND-MIXER FOR BETTER RESULTS AND QUICKER TOO). IF NOT ENOUGH INSTANT POTATO ADD A LITTLE MORE AT A TIME UNTIL YOU GET THE CONSISTENCY YOU WANT.
