Yield: 6-8

  • 1 tablespoon unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1-1/4 cup milk

Heat oven 450 degrees. Lightly butter and flour muffin tin. In a large bowl whisk together flour and salt. In separate bowl whisk together eggs, milk and butter. Pour over flour mixture and fold until just blended. Fill muffin tins 2/3 to 3/4 full. Transfer cups to oven and bake for 15 minutes. Reduce temperature to 350 degrees for 20 minutes more. Remove from oven to rack, puncture sides w/sharp knife. Let steam escape. Serve immediately,
