Yield: Serves 6

  • 2 cups leftover mashed potatoes
  • 1 slightly beaten egg
  • 1/4 cup chopped onion
  • salt and pepper to taste
  • 1/4 cup flour (for dipping)

Mix together egg, onion, salt and pepper and add to potatoes. Mix well. Shape into 6 patties. Dip in flour; then brown slowly in butter, about 5 minutes on each side.
