Yield: Serves 6
- 2 egg yolks, beaten
- 1 15-ounce can sweetened condensed milk
- 1/2 cup lemon juice
- 1/4 teaspoon salt
- 1-1/2 cups cooked chopped prunes
- 2 egg whites, beaten stiff
- 18 graham crackers
Beat the egg yolks until light and stir in the condensed milk, lemon juice, and salt. Fold in the prunes and beaten egg whites. Put in a buttered dish in layers with the graham crackers and chill overnight.
