An excellent dish, particularly useful for a buffet party as it keeps warm for a good time and does not lose in appearance by waiting.
Yield: Serves 12
- 1 large egg plant
- 2 green peppers
- 3 onions
- 1/2 pound mushrooms
- 1/4 cup olive oil
- 1 large can of tomatoes, or fresh tomatoes in season
- salt and pepper
Cut up vegetables and mix with oil, seasonings, and tomatoes. Pour into a large greased casserole. The juice should just be seen around the edges of the vegetables. Cook for 1 hour in a 350 degree F oven.
