Roasted Brisket of Beef

1 4 1/2 lb fresh brisket of beef
1 lb fresh mushrooms, cleaned and cut into halves
3 small onions, quartered
10 garlic cloves
1 6oz can tomato paste (or try pureeing your own)
2 cups water
2 1/2 tsp salt
3/4 tsp pepper
1 bay leaf


Preheat oven to 350F

Place the brisket in a large roasting pan and set aside. In a food processor, puree the remaining ingredients except bay leaf. Pour the mixture over the brisket and add bay leaf. Cover with foil, place in oven and roast for 3 ½ hours. Slice brisket and return it to the pan and cook for 5 more minutes. Remove bay leaf. Serve immediately.
