Sesame Scallops

2 tablespoons canola or olive oil
1 garlic clove, minced
3 tablespoons julienned fresh ginger
4 scallions, julienned
1/2 red bell pepper, julienned
1 pound fresh scallops, trimmed
2 tablespoons toasted sesame seeds*
1 tablespoon sesame oil
1/4 cup chopped fresh parsley or cilantro


Heat olive oil in a skillet or wok. Stir-fry garlic, ginger, scallions, and pepper for 1 or 2 minutes, then add scallops, and heat for another minute. (*Toast sesame seeds over high heat in a dry skillet for a couple of minutes.) Add sesame oil, then toasted sesame seeds. Serve immediately, garnished with fresh parsley or cilantro.
