Seven-Spice Blend

1 tablespoon cardamom pods
1 tablespoons coriander seeds
2 teaspoons whole, dried Szechuan peppers
4 star anise pods
2 tablespoons fennel seeds
2 teaspoons whole cloves
1 2-inch cinnamon stick
2 teaspoons kosher or sea salt
1 teaspoon whole black peppercorns


In a small glass jar, layer ingredients. Attach a tag with instructions: Place mix into a spice grinder or mortar-and-pestle and grind finely. Store in a separate glass jar.

I can see that this would be a great spice blend. How about some suggestions for use?

Greetings one and all.
This blend is excellent in stirfrys that include tofu or chicken - the over tomes of Anise have a sweetish licorish taste that is not over bearing but add a unique flavor. I have used commercially produced 5- and 7 spice blends with great success as mentioned above. Also, some breads lend themselves to having a spice blend used. Stronger bread flavors include pumpernickels, and ryes, some cinnamons, and the like.
Hopefully this can help with some ideas.
