Southwest Chili Mashers

Use one 12-inch Dutch oven with 24 briquettes.

4 medium red potatoes, skins on, quartered
1 tablespoon sunflower seed sprouts
1 tablespoon chopped cilantro
1 teaspoon mango powder
1 teaspoon salt
1 teaspoon white peppercorns, crushed
1 red chile, chopped
1 green chile, chopped
1/4 cup (1/2 stick) butter


Arrange the briquettes in ring patterns, with eight underneath and 16 to be placed on the top of the Dutch oven. Cover the potatoes with water in the Dutch oven, and boil until soft enough to mash. While potatoes are boiling, in a medium mixing bowl, mash the sprouts, cilantro, mango powder, salt, pepper, chiles, and butter to form a paste. Mash or rice the potatoes. Stir the paste into the mashed potatoes.
