Squash Flowers and Eggs Lamanna

2 tablespoons olive oil, or more to taste
25 or so zucchini flowers (sepals removed)
4 eggs


Heat oil in skillet. Add flowers and saute lightly until they wilt. Beat eggs and add to skillet. Scramble all together. Season to taste with salt and pepper.

Serve with crusty bread.
