Strawberry Tart

Ingredients

1-1/3 cups flour
2 tablespoons sugar
1/8 teaspoon salt
1-3/4 sticks butter
2 egg yolks, beaten
4 tablespoons ice water
3 pints whole strawberries
6 ounces apricot jam

Instructions

Mix together dry ingredients and cut in butter. Beat egg yolks with ice water, and add to dough. Work quickly to blend well, then knead dough just once or twice and form into a ball. Chill at least 20 minutes, then roll out. Press into the sides and bottom of a tart pan. Chill again in pan, then weight with beans and bake at 350 degrees F for about 20 minutes, or until brown. Meanwhile, clean and hull berries. Heat jam over low heat. Arrange berries, tips up, in baked crust and brush with apricot glaze. Chill.
